Roasted Poblano Yam Mashers

  • Yams (cut into quarters) - 3
  • Poblano peppers - 2
  • Heavy cream - 1/2 cup
  • Olive oil - 1/4 cup
  • Salt & pepper - to taste
  • Coffee (brewed) - 1/2 cup

In a bowl, toss yam quarters in 1 tbsp of olive oil and salt & pepper. Place in roasting pan and repeat with Poblanos. Bake at 375 for 45 minutes. Skin and deseed peppers then cut into 1 inch strips. Place yams and Poblano strips into bowl then add cream and coffee. Mash well, the more you mix the fluffier the yams become. Add salt & pepper to taste. Serve as starch with protein of choice and fresh veggies.
